Cajun Risotto À La Cx

Ingredients
Cajun Risotto a la Cx
  • Chicken breast fillets
  • Cajun Spice (Cx cheat)
  • Red onion
  • Garlic
  • Chestnut Mushrooms
  • Baby Red Peppers
  • Orzo pasta
  • Creme Fraiche
  • Rocket 

Method

Fry chicken until browned

Add Cajun spice. 

Add a little water.  Boil off the water.

Add onion and garlic.  Fry until softened

Add mushrooms and red peppers.  

When veg are cooked, add orzo pasta and mix in.

Add boiling water to cover mixture.  

Keep adding water as needed until the pasta is cooked.

Add Creme Fraiche and Rocket and stir through.

Serve up.

Wholemeal (but not so healthy) Bread and Butter Pudding

    
Wholemeal Bread and Butter Pudding










Ingredients
  • Wholemeal bread soft rolls
  • Butter/Margarine/Spread
  • Sultanas
  • Brown sugar
  • Eggs
  • Milk
  • Nutmeg
  • Cream/Custard/Creme Fraiche to server

Method

Split bread roll in half.  Butter the insides.   Sprinkle with sugar. Add sultanas. Sandwich together. Butter outside of rolls.  Cut in half and place in oven proof dish.

Mix Eggs, Milk and nutmeg in a jug.

Pour egg mixture over bread.  Using a fork, squidge the bread in so that it absorbs the liquid. 

Leave to stand for an hour.

Place in oven for around 30-40 mins until golden brown.

Serve with creme fraiche.

Watercress and almond pesto pasta with roasted ham

Ingredients
Watercress and almond pesto pasta with roasted ham
  • Watercress
  • Blanched skinned almonds
  • Garlic 
  • Parmesan
  • Lemon zest and juice
  • Olive oil
  • Salt and pepper
  • Tagliatelle
  • Ham joint

Method

Put ham joint in the oven to roast

Blitz the watercress, almonds, garlic, Parmesan, lemon, olive oil and seasoning in a food processor

Cook tagliatelle 

Add pesto to tagliatelle

Chop ham into small pieces

Serve tagliatelle and top with the ham

Chilli without the chilli beans!

Ingredients

  • Minced beef
  • Stock cube
  • Red onion
  • Garlic
  • Tin of tomatoes
  • Courgette
  • Button mushrooms
  • Red pepper
  • Fajita spices (Cx cheat)
  • Cayenne pepper
  • Chilli flakes


Method

Fry Minced beef

Add sliced onion and garlic

Add stock cube

Ensure meat is cooked through

Add tomatoes and allow to simmer

Add in vegetables

Serve when veg are cooked


Goes great with tortillas spread with cream cheese.

Day After Pancake Day Pancakes

So, I was out on pancake day and didn't get to make pancakes, so we had them the day after instead.  Pancakes are easy to guesstimate, you just get the consistency you want and do your "pour le chat" pancake to make sure it tastes ok. (I'm reading Doomed by Chuck Palahniuk and they mentioned this in there - it's the first pancake you make that is always gnarly looking so you can feed it to your cat).

Ingredients

  • Milk
  • Eggs
  • Self Raising Flour (yeah, I like fluffy pancakes!)
  • Pinch of salt (which I forgot to add both times)
  • Soft cream cheese (like Philadelphia) - optional
  • Oil/Butter

Method

Whisk together ingredients

Oil/Butter frying pan

Pour in mixture.  

When cooked flip over to cook the other side


The fun part is the toppings/fillings.  We had:

  1. Feta cheese, black pepper, rocket and honey
  2. Blueberry, creme fraiche and maple syrup
   
Totes amazing!

Cx Stylee Stir Fried Rice

Ingredients
  • Brown rice
  • Roast lamb chopped up
  • Garlic
  • Ginger
  • Spring onions
  • Asparagus
  • Mushrooms
  • Kale
  • Chilli powder / flakes
  • Soy sauce
  • Eggs

Method

Cook brown rice

Fry garlic and ginger.  

Add in spring onions, asparagus, mushrooms, kale

When cooked, add in roast lamb, chilli, soy sauce

Add rice and extra soy sauce as needed

Make a nest in the middle of the rice and break in the eggs

Cover until eggs are cooked through.  You may need to push the rice out more to ensure the white of the eggs get fully cooked.

"Maniraided" Leg of Lamb

Ingredients

  • Leg of lamb
  • Dill
  • Greek Yogurt
  • Lemon zest and juice
  • Chilli flakes
  • Salt
  • Pepper

Method

Blend dill, yogurt, chilli flakes, lemon zest and juice.

Coat leg of lamb in yogurt sauce, leave to marinate in a roasting dish.

Add a little water to the marinade.  

Cover dish and roast until meat is soft, turning joint over halfway through.

Remove cover and allow meat to brown.

Remove from oven and allow meat to rest

Serve with roast sweet potatoes and steamed kale.

Fish Pie À La Cx

Ingredients

  • Salmon Fillets
  • Raw Prawns
  • Peas
  • Sweetcorn
  • Red Onion
  • Garlic
  • Dill 
  • Milk
  • Flour
  • Butter
  • Bought in Cheddar Mash (Cx Cheat!)

Method

Fry Red Onion and Garlic until soft.  

Add milk and when warm, add salmon fillets.
  
When salmon is half cooked, remove from pan and place in oven proof dish and break into smaller pieces. Also add in the Prawns, Sweetcorn and Peas.
 
In another pan, melt butter, add flour then gradually add milk, onions and garlic (or if you're impatient like me, add flour and butter to milk then liquidize).  Add dill to sauce.  

Add sauce to the ingredients in the oven proof dish and mix.

Spoon mash on top 

Bake in oven for 25-30 mins until potato is browned.

OK, so the way I see it, cooking is one of those skills that just comes from within. Something you can learn yes, but it's also a mixture of knowing what works, how you like your food and how you were brought up around food.  


I look at recipes for inspiration, but usually just end up doing it my way and concocting an even more delicious version.  Knowing what quantities of food to use and knowing when things are cooked to perfection are important qualities of a guesstimate chef.

I don't want to sound all big headed about food as I have made my mistakes too and can always see ways I could have improved on a dish, but I'm really good at cooking a great meal.  Yes, sometimes I cheat and use shop bought stuff but sometimes you just want something quick and easy to make.
  
I'd like to share with you some of my recipes and if you're good at guesstimating how much of everything to use you can make you're own inspirational meals.
